Summer Salads

Summer is such a fun time of year!  I love the sun, swimming, cookouts, and of course, pretty summer salads.  I’ve been pinning like crazy all of the salads I can’t wait to try this summer as side dishes or main dishes.

**They are in no particular order… well maybe the Mexican inspired ones will get made first.  If you love south of the border recipes as much as I do be sure to check out my Mexican Recipe Round Up I prepared for Cinco De Mayo.

#1 Cowboy Caviar– this is a caviar I can get behind from Culinary Hill!  I don’t eat sugar so I’ll just leave that out or throw in a packet of Truvia.  Some of the reviews said it was pretty sweet anyway.  I do live in the midwest and we do like our sugar so I can always reserve my portion and add sugar to the rest.

#2. Where has this Chicken Bacon Ranch Layered Salad been all of my life?  YUM!  I know this salad will be a hit in our house full of bacon lovers.  Thanks, Melissa from Melissa’s Southern Style Kitchen for this inspiration!

#3 Greek Garbanzo Bean Salad from Fueling a Fit Fam is bound to be a hit in our house.  I love chickpeas in a salad- they add just the right amount of texture and protein.  I like that they have a homemade salad dressing too.  It’s hard to find sugar free options!  I like that this salad is versatile too- I could easily switch out the type of cheese and dressing to make it have more of an Italian feel.

#4 Keeping with the chickpea theme (I’m sure  you could sub any bean you like) here is one that combines my love of chickpeas with my love of feta.  I can’t wait to try Chickpea, Avocado and Feta Salad!  Thanks to Two peas and Their Pod!  This one is on the menu for Memorial Day Weekend.  🙂

#5 I like my salads with a bit of crunch and go through 2  big bags of coleslaw mix from Sams every week!  This Greek Yogurt Coleslaw recipe from Gimme Some Oven caught my eye because I always have coleslaw on hand and it doesn’t call for mayo so Sammie can eat it!  (She’s allergic to eggs)

#6 Watermelon Salsa?  Sounds just different enough to be amazing!  Again, Gimme Some Oven  is the mastermind behind this one.  She has some amazingly creative recipes!  I’m counting it as a fruit salad because 1.  it would be an awesome side dish and 2. it would be amazing on top of a simple lettuce salad!  YUM!

#7 You can’t have a summer salad list without a good baked potato salad.  It’s gotta be against the law or something.   I’ll have to get the expensive vegan mayo for Samantha, but I think it’ll be worth it!  Tastes Better From Scratch is a great resource for family-friendly foods.

#8 This Layered and chopped Taco Salad screams summer to me.  It looks like a meal I will love to throw together on a hot summer night so I don’t have to heat up the kitchen. #9 An Italian salad to beat all Italian Salads… Tomato Mozzarella Salad from Little Broken.  Her pictures make my mouth water!

#10 is my mom’s fluffy fruit salad, lovingly referred to as “Fluffy Stuff” in our house.

Just 4 ingredients and so creamy and good.  Mom used to change out the flavor of Jello to match the holiday- green for St. Patrick’s Day, red for Valentines Day and orange for Halloween.  I was feeling generous so I added some mini chocolate chips this time for my kids.  🙂

It is a bit of a stretch to call this a salad I know, but it’s a great summer dessert- no baking required and goes together in 5 minutes.

5 easy steps:

  1. Drain a can of mixed fruit (you can use fresh or frozen fruit if you prefer)
  2. Add 1/2 cup or so of marshmallows- just to your taste
  3. Stir in Jello-any flavor and just the powder, no water- right out of the box!
  4. Fold in cool whip (we like extra creamy!)
  5. Try not to stick your face directly into the mixing bowl.
